Just steps from the harbour of Fiumicino, Pascucci al Porticciolo surprises with the unassuming elegance of a bright dining room, pale in tone and classical in atmosphere, attuned to the authentic character of the locality. The welcome extended by Vanessa Melis and her front-of-house brigade is impeccable: professional, spontaneous and capable of putting each guest at their ease. In the kitchen, Gianfranco Pascucci delivers one of the most convincing interpretations of so-called "produce-led cuisine", in which a technique of absolute precision is placed at the service of exceptional raw materials. Amberjack, king prawns, turbot and the rest of the catch impress through their freshness and quality, while the preparations eschew all virtuosity for its own sake, favouring balance, harmony and respect for the ingredient. Among the most memorable dishes, the white grouper tataki with curried herbs, barbecued escarole and green tomato cream stands out. This is a creation that evokes Asian suggestions without losing its Mediterranean identity.
