Ovum, the restaurant of boutique hotel Nidum, is perfectly at home in the impressive, historic Arsenaal. At lunchtime, you can opt for the surprise menu or simpler alternatives; in the evening, there is also an à la carte selection. Maikel van Veen is just as adept at preparing a warm chawanmushi with lobster and raw and marinated vegetables as he is at cooking veal shoulder until succulent and pairing it with his own take on Stroganoff sauce. His technical skill stands out, as do his eye for quality and deft handling of flavours from around the world. This precise cooking is thoroughly convincing.
