ONE doesn't fit neatly into any category. Housed in a former factory, the restaurant retains its industrial character, offset by a contemporary interior featuring unusual artwork and murals. The terrace by the River Roer is a wonderful spot to unwind. You are in good hands here, as Edwin Soumang's considered approach to gastronomy soon makes clear. The chef has an impressive 1 000m2 urban kitchen garden at his disposal. Soumang knows that everything starts with the quality of the ingredients. What he doesn't grow himself, he sources as locally as possible. His creativity showcases the richness of the terroir, yet he remains grounded in the fundamentals, not least through his wonderful sauces. Take his refined veal jus, for example, served with meltingly tender veal fillet, potato both crisp and as an espuma, and Swiss chard in various forms. The option of having the set menu in three, five or seven courses is an excellent idea. One word sums up ONE perfectly: captivating.
