His modern cooking draws on French traditions, highlighting pure flavours and refined presentation. Expect dishes such as lightly seared Argentine prawns with melon, curry and a sesame crisp, or medium-rare lamb fillet accompanied by ratatouille and succulent lamb neck. Seasonal asparagus dishes further demonstrate his flair for generous, comforting flavours.
