Altin Mero describes himself as a world citizen. His Mediterranean roots and experience in prestigious houses have fashioned his distinctive culinary signature packed in personality which he calls ‘biomatic’: umami nuances, vibrant combinations, grilled ingredients… For example, he may create a dish that is founded entirely on black coloured ingredients, followed by saddle of lamb with a thin layer of fat and glazed in miso and a gravy, flanked by fresh, tart green strawberries.
