Since 1984, the Van Bourgonje family has nurtured Merlet hotel and restaurant, turning it into a firm favourite for many a guest. This extraordinary eatery is testament to their culinary passion. A dining room entirely clad in gold leaf, striking artwork at every turn, a moss-covered wall behind the inviting fireplace, 3D effects and a glass installation in which sand gradually forms dunes – the setting is truly spectacular. The surrounding landscape is brought indoors in a remarkably imaginative way. The terrace overlooking the dunes is also delightful. Marco Helsloot's cuisine centres on meticulously crafted dishes enlivened by bright acidity and Asian nuances. He creates excitement with bold flavours while maintaining harmony on the plate. Premium ingredients are the norm here, including locally sourced produce such as Wadden Sea prawns and Texel lamb. One of the restaurant's signature dishes is Volendam-style stewed eel: IJsselmeer eel is gently braised upright and served in a casserole, accompanied by a rich velouté made from Opperdoezer Ronde potatoes, butter, eel and vinegar. A fine brunoise of beetroot provides a welcome sweet counterpoint. One thing is certain: dining at Merlet is an intriguing experience from start to finish.
