The short journey through the beautiful Frisian countryside serves as a prelude to the sense of tranquillity that awaits you in this light-filled greenhouse. The surrounding vegetable gardens, fields and glamping tents form the backdrop to this ode to Friesland. Chef Kees and gardener Christiaan have joined forces to showcase the best the local area has to offer, either homegrown or sourced from nearby suppliers. The chef brings together the rustic flavours of Friesland with effortless finesse in his playful set menu. Vibrancy and bright acidity are recurring themes, for example in sherry flan with pieces of intensely glazed carrot, sweet peach, crisp Chinese cabbage, chopped chives and croutons, all coming together in delicious harmony. A digestif by the campfire makes for the perfect ending to a uniquely serene experience.
