This distinctive stage also sets the tone of chef Esposito’s take on Italian cuisine. Exceptional ingredients form the backbone of the score, crafted subtly and even playfully, without losing sight of familiar flavours. He finds the perfect balance between a chilled hazelnut cream spiked with balsamic vinegar and a herb‑oil and bay‑leaf-laced crème anglaise, whose aromatic depth highlights the intensity of honey and ice cream. The evening set menu is more elaborate than the lunchtime lineup, which may be simpler, but also bears the stamp of the chef’s exuberant hallmark signature.
