A nature lover, he has made eco-responsibility the backbone of his establishment: waste management, pellet heating system, organic cotton fabrics... Every aspect is examined and analysed in terms of its impact on the environment. In addition to singing an ode to freshwater fish, the chef's passion for herbs and roots from the surrounding mountains is becoming more pronounced than ever, alongside herbs and flowers from the kitchen garden, honey from bee hives and fruit and veg from local market gardeners.
