In one of the most picturesque corners of Monferrato, within an ancient monastic building that has been converted into an elegant five-star hotel, a truly enchanting culinary experience takes shape. Under the guidance of multi-starred chef Enrico Bartolini, the kitchen is led by Gabriele Boffa, a Piedmontese chef with a solid international background, who is able to combine a deep understanding of the local area with remarkable technical skill. The menu features tasting courses that alternate between faithful interpretations of regional classics – the agnolotti del plin are particularly memorable – and more personal creations, all of which remain firmly rooted in local produce, flavours and traditions. Here and there, Latin American influences and bolder touches emerge, though they are handled with balance and restraint. The dining experience takes place in an elegant dining room with just a few tables, where attentive service accompanies a sequence of dishes brimming with character, from carefully crafted amuse-bouches to homemade baked goods, right through to dishes that showcase excellent ingredients. The wine list is also of a high standard, supported by a competent and close-knit front-of-house team.
