The high-end Weeshuis boutique hotel occupies the most striking building in historic Gouda. The exclusive COCO Champagne bar is the place for a generous breakfast, a casual lunch or a wonderful afternoon tea. Full of character, with its old vaults, colourful decor and luxurious design, LIZZ provides the perfect setting for an all-round experience in the hands of the talented Remco Kuijpers. The accomplished chef brings sensibility to his cooking, which is underpinned by technical prowess. Spices and subtle Asian acidity add a new dimension to top-notch Dutch ingredients. He takes diners on a fascinating and at times playful journey of discovery. For example, he tops succulent sea bass with dots of sesame mayonnaise and black sesame seeds, then pours a foamy beurre blanc around it. Caperberries and an oil of nasturtium and black garlic lend the sauce vibrancy. A spoonful of airy hollandaise with just enough mustard completes the dish. This intricately crafted cuisine is full of surprises, yet retains a sense of lightness. It is original and bold without losing its balance, qualities that are beautifully highlighted by the excellent wine pairings.
