Two old mates, who met at Tours hospitality management school, rustle up a finetuned culinary experience, delving freely into the cornucopia of first-rate local produce from asparagus and strawberries in season to Roi Rose pork and goat's cheese. Dishes that taste as delicious as they sound include crispy tartlet, green beans, razor clams and horseradish ice cream or lemon tart sprinkled with dried lime, a wickedly tempting detail that makes this dessert irresistible.
