In a 1930s neo-Basque hotel nestled in a pine forest near the legendary Pilat dune, with an interior by designer Philippe Starck, Le Skiff Club is a veritable haven, the cosy conservatory dining room decorated in the style of a yacht club. Captain Stéphane Carrade celebrates the Aquitaine region and its produce, adding his own personal touches. Delicate and original desserts by Alexandre Blay, like his Mexican vanilla, in the form of crème brûlée and jumbo grapes with JM rum, gavotte and caramelised almonds, ice cream and zephyr of grilled pods, are the icing on the cake.
