Not far from Aix-en-Provence, chef Nicolas Bottero modestly conjures up exciting, flavoursome and fragrant cuisine. As a child, he used to come and stay with his grandmother here, hence his affection for the colours and the terroir of the South of France. His flavoursome, fragrant cooking naturally stars the produce of local farmers and herbs from the garden: Mediterranean croaker roasted in olive oil; free-range poultry, spring garlic and a gutsy sage-laced jus.
