L'avis du Guide Michelin
André van Alten is a fine example of a chef who continually reinvents himself while remaining grounded in his core principles. His impressive classical training is evident in the perfectly judged cuisson of foie gras and Black Angus fillet Rossini-style, accompanied by an intense Madeira sauce with real depth. We also applaud his eagerness to share his experience with younger generations. His calm, assured manner as he leads his team in the open kitchen is remarkable. Van Alten lets the ingredients speak for themselves, yet continues to innovate. For instance, he showcases the versatility of langoustine by presenting it in four different ways, including a deeply flavoured bisque sauce and a crisp Vietnamese spring roll. His creativity also comes through in the way he prepares the garnishes and incorporates international nuances. The interplay of hot and cold, varied textures and subtle vibrancy creates excitement on the plate. He has a penchant for fish, although saddle of lamb cooked in a coarse sea salt crust is a house classic. The excellent wine recommendations and attentive service from the charming hostess complement the food beautifully. At intimate La Provence, with its tranquil, leafy terrace, they certainly know how to spoil their guests – and have done for over 50 years!
