Chef Johann Dubernet and his cheerful partner, Isabelle, in the dining room, sign colourful, fragrant and beautifully plated dishes whose influences are manifold: tartare of Basque trout, goat’s cheese naan, beetroot, lamb’s lettuce and Romeiko vinegar; iberico pluma pork, bulgogi, lemongrass-spiked garlic puree, pak choi cabbage, mashed sweet potato.
