Chef-patron Baptiste Ingouf, a local man with an impressive pedigree (having spent eight years working alongside Christophe Hay), cooks with a sense of complete freedom. His flavoursome contemporary cuisine is driven by superb seasonal ingredients and executed with precision – grilled octopus with aubergine caviar and coriander, or grilled cod with braised fennel and chorizo.
