A little over fifteen minutes from Florence, three young chefs give shape to a fresh and contemporary proposal centred predominantly on fish, without neglecting certain meat options. The project comes to life within the space of a former grocer’s shop, today transformed into a small restaurant with a somewhat vintage character: mismatched chairs and china of a former era, recovered with care, provide the counterpoint to a current and well-calibrated cuisine. The light and immediate dishes focus on quality produce, handled with simplicity and restraint, always to convincing effect. Among the highlights, the tuna tartare with chives, candied lemon zest and a touch of caviar stands out, while the dessert plays on freshness and contrast with marinated strawberries, mascarpone foam and meringue chips. All of this offered at decidedly attractive prices.
