A few steps from Vitoria’s famous medieval ‘almond’, this establishment is run by three young chefs (Asier Moreira, Koldobika Galán and Koldo Romano) who, far from a possible battle of egos, champion a shared hierarchy. Behind the restaurant’s name, a Basque term that translates to ‘sprout’, hides a small tribute to the old establishment that once existed here (the iconic El Clarete) and the rebirth of its legacy under a new format, brought up to date but not lacking identity. The proposal revolves exclusively around three seasonal tasting menus linked to local produce: Azoka (market cuisine, only at lunchtime on weekdays), Laburra (short) and Luzea (long). The kind of dishes served here include a delicious onion soup with garlic, Bilbao-style cod, venison sirloin steak, and many more.
