The name Junsui means "purity", a quality reflected in both the upscale interior and the Japanese cuisine. The minimalist decor has clean lines and a Far Eastern feel, and the atmosphere is intimate. The attractive wooden counter seats six diners. The omakase menu showcases chef Jay Lee's many years of experience in traditional Japanese culinary craftsmanship, not least in his superb sushi creations, prepared with exceptional technical precision. There is no compromise when it comes to the quality of the ingredients: the line-caught fish, dispatched using the ikejime method, and the A5 Wagyu beef, for example, are first-rate. Everything is made in-house, even the soy sauce, yuzu paste and ice cream. Note that this small restaurant is somewhat hidden away in the basement of Haus Meer.
