Slip away from the hubbub of Rue de Flandre and venture into the almost theatrical venue of Jayu. This snug eatery, reminiscent of a speakeasy bar, features 12 stools around a counter (and one table). Three bells ring as the curtain rises at the start of a performance in twelve acts that lasts two hours. Sang Hoon Degeimbre and his skilled team favour a natural culinary style steeped in nods to Korea with an accent on fruit and veg, spices, umami and fermented flavours. For example, glazed langoustines are dusted in smoked paprika and flanked by a succulent dip of doenjang laced in briny seaweed.
