What used to be the guesthouse of Lilbosch Abbey now exudes the charm of a classic fine dining restaurant. Built in 1890, this stately property is surrounded by a lovely garden perfect for al fresco dining on sunny days. Martin Bruggeman demonstrates time and again that he is a consummate craftsman. He relies largely on local ingredients, from game provided by hunters in his circle to fruit, vegetables and herbs grown in his own garden. Wild duck breast, full of character and cooked to a beautiful pink, is served with a rich duck jus à l'orange, red cabbage and sautéed girolles. The chef's sincere pride in his work is more than warranted.
