The drive to this traditional house with its authentic thatched roof, deep in the woods, showcases the magnificent natural beauty of the Veluwe. That same charm carries through to the romantic interior and the terrace, with its sweeping views of the surrounding greenery. Technical skill and creative ideas go hand in hand with a firm grounding in the classics. Brandon de Bruin's passion as a chef comes through in his cooking. His tuna dish is a signature: the fish is cut into tartare and seasoned with lemon zest and olive oil, then topped with briefly seared slices of tuna belly and surrounded by a wonderfully rich, spicy chorizo cream lifted with orange juice and marinated tomatoes. The excellent wine recommendations are perfectly matched to the food. You can even round off the experience by checking into the apartment above the restaurant.
