Vibrant Héron embodies Utrecht's youthful spirit. Owners Joyce and Victor deserve nothing but praise for their respect for the seasons and Dutch terroir. They work closely with their suppliers and take a considered approach to gastronomy – the jars of fermenting ingredients and cookbooks on display speak volumes. Their enthusiasm fuels Josephien Blom's creativity, but the ingredients always remain the focus. Pig's trotters with a bright, tangy remoulade sauce are a house classic; her repertoire also extends to potato noodles cooked in a vegetable broth and served with succulent haddock dumplings glazed with an intense prawn reduction. Expect flavours with real character, plenty of surprises and a captivating experience from beginning to end.
