Natural wood sets the tone in this stylish dining room at the Burg Vital Resort. Under Sebastian Jakob's direction, flavoursome dishes showcasing fantastic ingredients are prepared in the small open kitchen, with well-judged Japanese influences providing intriguing accents. The cooking strikes a deliberate balance between regional roots and a cosmopolitan outlook, one example being the exceptionally fresh, succulent Carabinero prawn with subtly tart sea buckthorn, aromatic carrot brunoise and shellfish sauce with mild Numex chilli. A knowledgeable sommelier is on hand to guide you through the seemingly endless wine cellar, with around 4 500 labels! A nice touch: The individual ingredients of the set menu are presented to you before you eat. In summer, the wonderful terrace is the ideal spot for an aperitif. A winter visit has its appeal too: Oberlech, at an altitude of 1 720m, is completely car-free Dec-Apr.
