The Goyvaerts brothers welcome diners to the imposing Domusdela, a converted monastery church in the heart of Eindhoven. Steeped in history, this splendid setting is replete with Scandinavian accents; high ceilings and architecturally striking walls lend the space a sense of grandeur. The wine cabinet is an eye-catching feature. Characterised by bold flavours and refined details, the dishes pack a punch, and their presentation is always carefully considered and precise. Take, for example, the entrecôte and stewed Dutch beef, accompanied by both a parsnip purée and a parsnip sauce enhanced with coffee, souffléed potatoes, caper leaves and a herb cream.
