Among quiet alleyways opens the entrance to Palazzo Venart, one of the most exclusive residences in the city. Beyond the gate, two gardens – one at the entrance and one overlooking the Grand Canal – offer an unexpected oasis of calm in the heart of Venice. The dining room, intimate and gathered, counts just six tables and is enriched by a dramatic silk-road-inspired wallpaper. At the stove, chef Donato Ascani offers two tasting menus, the more creative Arte, Orti e Laguna and I Classici del Glam, alongside the option of choosing from the à la carte. His cuisine is born from listening to the lagoon and its rhythms, reinterpreting the local area with contemporary technique and great sensitivity. Through a constant dialogue with fishermen and market gardeners from the islands – from Sant'Erasmo to Cavallino – wild herbs, vegetables, early-season produce and hand-gathered shoots become the stars of his preparations. Particularly convincing is his use of the grill, capable of enhancing the raw material without overwhelming it, in a gastronomic journey of great elegance.
