In the quiet village of Trautmannsdorf, set above Bad Gleichenberg, siblings Richard and Sonja Rauch have become firmly established on the Austrian restaurant scene. In his four- to 10-course set menu, the chef-patron combines influences from his home region with international touches, deploying just the right amount of creativity. This works particularly well in the "Umamibombe" ("Umami Bomb"): wild mushroom egg custard with chanterelle tartare, chive vinaigrette, apple balsamic vinegar and garum, accompanied by marinated cured pork knuckle, pickled beech mushrooms, ribwort plantain flowers and freshly picked wild thyme. The ingredients are top-notch, with pork from their own pigs also playing an important role. In summer, the terrace beneath a canopy of vines is particularly inviting. Everything runs smoothly thanks to the charming, attentive front-of-house team. Tip: The shop has a great selection of products to take home. In addition to the fine dining restaurant, the siblings also run Wirtshaus, which is open at lunchtime. Nearby Villa Rosa, which dates from 1913, has lovely guestrooms and also hosts cookery classes.
