In the historical centre presided over by the Tour de l'Horloge, this restaurant lies behind a carriage entrance, its contemporary interior design in sharp contrast with its medieval surroundings. Tabletops made from reclaimed scallop shells hint at a genuine efforts towards sustainability. Chef-owner Marie-Léa Coulon, who previously worked with Christopher Coutanceau, makes sweet-and-savoury combinations her signature style. These feature in half the dishes, including octopus, strawberries and chilli, or Breton pork, Romanesco broccoli and plum, in which the fruit brings out the flavour of the meat.
