For the city's food lovers, the Kaiblinger family's restaurant is as much a Salzburg landmark as the city's Mönchsberg mountain. Andreas Kaiblinger's classically based cuisine draws on excellent ingredients to create carefully considered dishes full of character. He subtly plays with Asian and Mediterranean flavours. Well-judged combinations include tomato ravioli with tomato water, peas and fennel, or pigeon with carrot purée and potato pastry. Under the direction of hostess Andrea Kaiblinger, the service is exceptionally charming and attentive. Always on hand to offer advice, she recommends interesting wines by the glass. The selection of Austrian wines is particularly noteworthy. With vibrant splashes of colour and decorative modern artwork on the walls reflecting an eye for detail, the elegant setting also plays its part. The secluded courtyard terrace is also lovely.
