Housed in a beautiful old inn located in the heart of the Treviño region, a unique part of the province of Burgos that is completely surrounded by lands belonging to Álava. There, in a renovated space that skilfully blends rustic features (sturdy exposed stone walls, wooden beams, a fireplace, etc.) with contemporary ones, such as the semi-open kitchen, chef Alberto Molinero has taken a giant leap forward in presenting his culinary offerings, which are already interesting and have a modern flair. Here, everything revolves around two tasting menus (Caliza and Arcilla), reflections of the local environment and its boundaries, with dishes inspired by the river, the vegetable garden, the mountains, the sea, and the vineyards... We especially liked the ‘surf and turf’ dish—their teardrop peas with squid and pork—as well as the delicious course of Biscayan style sea bass. It incorporates a pleasant garden area, with a tent for celebrations and events!
