The concise menu, directly sourced locally (small fishing boats, market gardener in Bonifacio, Corsican veal), unveils a contemporary slant rich in Mediterranean accents, without forgetting a few more exotic inspirations. The technical virtuosity and spot-on seasoning are illustrated by cuttlefish and prawn cannelloni with a langoustine cappuccino, line-caught croaker with Riviera-style (tomato and olives) potato gnocchis and garden herbs, or trompe l’oeil of citron, with a small, shell-shaped madeleine cake and Corsican lemons. All of which is served in a magnificent conservatory-style interior flooded in light.
