Three tasting journeys are on offer – Contaminazioni, Dimora Ulmo and A Mano Libera – conceived to accompany the guest in a continuous dialogue between modern cooking and local traditions; individual courses may also be selected à la carte from within the menus. All of this takes shape within an ancient palazzo sensitively restored, enriched by a summer terrace with a striking outlook over Sassi. Among the dishes tasted, the porchetta-style rabbit with Ligurian gravy and roasted pepper merits particular mention, a successful expression of technique and personality. The service, attentive and engaged, conveys both expertise and genuine passion, while the well-constructed wine selection does justice to the territory without forgoing an openness to the rest of Italy and to some interesting international labels.
