With the Eastern Scheldt and the North Sea providing the majority of its ingredients, and the De Zilte Hof garden across the street supplying vegetables, fruit and herbs, De Kromme Watergang draws on the wealth of ingredients that Zeelandic Flanders has to offer. That ambassadorial role is also reflected in their respect for the ingredients, as demonstrated by their fin-to-tail and nose-to-tail approach. At this charming restaurant, a firm fixture since 1993, you will now mainly see Tom Vinke in the open kitchen, as he and his sister Evie are taking over the reins from their father, Edwin. Ingredients take centre stage, enhanced by carefully considered accompaniments with exotic spices, aromatic notes and bright acidity. For example, the chefs add depth to a slow-cooked whiting fillet and a ragout of cuttlefish, coconut cream and lemongrass by pairing them with a salad of marinated fennel and pulses and a light apple and dill vinaigrette. Zeeland's briny intensity is given a refined twist here and, at times, international flair. Seafood plays the starring role – even on the chocolate trolley! One final tip: book one of the lovely suites and fall in love with the beautiful surroundings, just as both chefs have.
