The view of the shimmering Vliet canal is breathtaking! Marcel van Teijlingen's culinary creations are a testament to his attention to detail and refined palate, both in their presentation and their flavour profiles. His cooking is unmistakably classical at heart, enlivened by subtle touches of playfulness delivered with measured precision. A terrine of Amsterdam ossenworst (a lightly smoked, spiced raw beef sausage) with foie gras and pistachio demonstrates his skill, its robust flavours tempered by beetroot cream and a chicory salad with balsamic vinegar. The old and the new join forces at De Knip.
