On the first floor of the historic 18C palazzo that today houses the Hotel De Ville, overlooking the ancient port, stands a restaurant that reveals from the outset a personal and imaginative cuisine. The offering, Ligurian in character yet sustained by a contemporary technique honed through years of experience in fine dining establishments, unfolds across three tasting menus. Among the most representative dishes, mention must be made of “La Basse-Coeur”: a harmonious composition of guinea fowl, onions, burnt lime, marjoram and chargrilled artichoke, a balance of contrasts that articulates the philosophy of the house.
