L'avis du Guide Michelin
Overlooking the main street of Baronissi, within a historic palazzo, this small restaurant draws its strength from the passion and close partnership of the couple who animate it: Salvatore in the kitchen and Federica in the dining room, winner of the MICHELIN Service Award 2024. A handful of tables, contemporary furnishings, and an intimate atmosphere provide the setting for a welcome that is warm and spontaneous, enriched by an attentive narration of both the cellar and the gastronomic offering. The kitchen reinterprets Campanian ingredients and recipes with contemporary touch, favouring seafood and quality produce sourced also from a kitchen garden and a small family farm in Calabria, Federica's homeland. The proposal develops across two tasting menus: Senza Copione, entrusted to the chef's creative instinct, and Nero su Bianco, inspired by the sea and the surrounding hills, with the occasional international digression. Salvatore's cooking is precise and full of flavour without being overly elaborate; particularly accomplished is the bitter herb, seafood and black lemon risotto, a refined reinterpretation of a traditional local soup. The creamy and intense mantecatura is enriched by the iodine-laced flavours of oyster and a pesto of wild herbs gathered by the chef himself, while the balance between vegetal bitterness and marine umami finds further depth in the lightly seared oysters and melted cheese.
