The village of Eys is sometimes referred to as the Tuscany of Limburg and, sitting on the tree-shaded terrace, looking out across the undulating countryside with a drink in hand, you can see why! Inside, this charming farmhouse has been elegantly refurbished without losing its authentic character. Chef Pluymaekers occasionally makes use of exotic seasonings and has an eye for presentation, but his cooking remains rooted in tradition. The lamb and asparagus are locally sourced – their superb quality is immediately apparent – and elevated by a refined lamb jus. He knows the importance of deep sauces and moves effortlessly from a tournedos Rossini to a lobster Thermidor. The freedom to choose between the set menu and à la carte dishes only adds to the hospitable vibe at By Taste.
