Bedem – “fortress” in Croatian – is the perfect name: the restaurant looks out over Varaždin castle and its park, but also evokes the vision of chefs Anđelko and Zlatko, who aspire to create a “fortress of flavour”. Their cooking springs from careful research into local recipes, reinterpreted with technique and creativity, celebrating territorial ingredients such as Vidovec cabbage, pumpkin seed oil, Zagorje turkey and local trout... An experience that unites tradition and modernity: beside the fireplace in winter, on the pleasant terrace in summer.
