Located in a former Cistercian monastery dating back to 1442, this restaurant concocts a score tailored to today’s tastebuds. The menus draw heavily on local organic produce sourced from within a radius of 100km. In the evening, let yourself be tempted by a five- or seven-course menu, whose modern recipes have been devised with sustainability in mind and an eye on food-wine pairings. The wine list clearly has a soft spot for organic, biodynamic and natural vintages. A three- or five-course lineup is available at lunchtime.
