Nature is also the name of the game for chef Bosmans, who conjures up a high-flying culinary score courtesy of veggies grown on the property and regional produce. He might exalt the main ingredient with a spicy note in a bid to create fascinating combinations. An example: perfectly cooked seabass in a crispy skin is paired with crunchy squash, cream and shiso oil to further exalt the contrasts, together with a rich vegetable stock and a chewy, briny mussel.
