Created from the restoration of an old water-powered oil mill, the restaurant retains all the charm of its history: the kitchen is on the ground floor, while the dining room occupies the upper level in a charming glass-enclosed gallery with just a few tables overlooking the large wheel that once drove the millstone for olives and cereals. The dining experience unfolds across three tasting menus – vegetarian, land-based and seafood – designed to showcase the region in all its nuances. At the helm of the kitchen is Luigi Coppola, originally from nearby Paestum, who interprets the flavours and traditions of Cilento with a contemporary sensitivity, making judicious use of fermentation to add depth and complexity to the dishes without compromising the identity of the excellent local ingredients.
