A new city opening that marks the arrival in Italy of Akira Back, internationally renowned chef-entrepreneur and purveyor of fusion cookery that weaves together Japan and Korea through a distinctly American lens. Situated on the ground floor of the W Florence, the establishment immediately pulses with vibrant, fashionable energy, aided by decisively pitched music and a metropolitan atmosphere. The kitchen moves with freedom and playfulness, offering comfortable and cosmopolitan dishes animated by a pop verve that renders them instantly recognisable. Among the most sought-after specialities are the crisp American tacos filled with Korean-style beef bulgogi and finished with a “Japanese-style” ponzu sauce, alongside the miso caramel ice cream encased in a mock cigar of crisp chocolate.
