Turkey's rich culinary heritage is given a contemporary twist with meticulously prepared premium ingredients. They put the focus on spices – they even have a spice library – and the provenance of the ingredients, which is detailed on a small informative card on your table. For example, the chef grills grouper over an open fire and serves it with beurre blanc infused with orange and sumac for a unique balance of rich, zesty and bitter nuances. Be sure to indulge in a glass of raki (they have an outstanding selection!) to complement this modern homage to culinary tradition.
