Here in the heart of the Alta Rocca, this legendary establishment is perched at an altitude of 700m. Behind its carefully restored walls, the large restaurant room – at once old-fashioned and elegant – lies beneath a beautiful wooden ceiling. Tall Art Deco-style glass panes connect it to the outdoors, and the terrace is shaded by tall Lebanese cedars. As for the food, understated compositions with intense flavours are built around premium-quality Corsican produce – some of which is foraged locally. John Dory and wilted pointed cabbage, lemon-infused seafood blanquette; smoked veal sweetbreads, peas and fairy ring mushrooms, conifer-infused jus; moelleux made with Ghisoni chestnut flour, served with fir bud ice cream.
